Chickpea Salad Sandwich Recipe


Ingredients

  • 1 (14 oz) can chickpeas, drained

  • 1 tablespoon lemon juice

  • 1 tablespoon red onion, chopped finely

  • 1/8 teaspoon ground cumin

  • 1/8 teaspoon smoked paprika

  • Salt & pepper to taste

  • 1 tablespoon mayo

  • 1 avocado, chopped

  • Sliced tomato

  • Microgreens

  • Arugula and/or Watercress

  • 4 slices of bread




Instructions

  1. Add the chickpeas to a medium bowl and coarsely mash them.

  2. Add the lemon juice, red onion, cumin, smoked paprika, salt & pepper, mayo and avocado to the bowl. Mix it together gently.

  3. Toast your bread. Add the chickpea salad, tomato, microgreens, arugula/watercress to each sandwich. Enjoy!
