Quick Pickled Watermelon Radish


Ingredients

  • 1 watermelon radish, washed, peeled, and shredded or sliced very thin

  • 1/4 cup rice vinegar (or apple cider vinegar)

  • 2 Tbsp sugar (or maple syrup)

  • Salt

Directions

  1. Add vinegar and sugar into a large bowl and mix well. Add radishes and toss.

  2. Let sit for 10 minutes in the fridge.

  3. Add a pinch of salt before serving - and you're all set!

  4. Store in an air tight container for up to a week in the fridge.
