Strawberry Spinach Salad


Ingredients


2.5 Tbsp balsamic vinegar


Salt and pepper


3 Tbsp olive oil


5 oz baby spinach (8 cups)


1.5 cups strawberries, cut lengthwise into thick slices


1/2 cup pecan halves, toasted and cooled


Poppy seeds and feta cheese for garnish






Directions

  1. Whisk together vinegar, 1/4 tsp salt, and 1/8 tsp pepper in a small bowl, then add oil in a slow stream, whisking well.

  2. Put spinach, strawberries, pecans, and feta in a large bowl and toss with just enough vinaigrette to lightly coat.

  3. Garnish with poppy seeds and enjoy!
