August - possibly the most abundant month of the year for Colorado agriculture! We are now seeing our favorite 'fruiting' crops like tomatoes, cucumbers, eggplants, and peppers in full swing, thanks to all of the sunshine. With such a variety of food coming out of our local farms, August is a great time to eat local!
